Lentil Barley Soup

As the weather gets colder keep this recipe on hand for those nights no one wants to go out.  You can easily have the ingredients on hand for this recipe.  Serve it along side a crusty loaf and you have the perfect, no need to go shopping, meal.

Pork, Apples and Potato Latkes

This meal is great served with green beans or asparagus and sour cream is optional.  You will need to purchase a cheesecloth to strain your grated potatoes this is the key for the latkes to stay together.

Pantry Chili

Most of these ingredients you can find in a well stocked pantry. Try with these beans or a mixture of your favourite. Change it up by letting your kids add their own toppings like: grated cheese, chopped fresh cilantro, guacamole or sour cream.

Chicken Chimichangas

You can fill these as much or as little as you like depending on your family. I find 6 works well for one recipe but small kids might only eat half of one. For a dairy free version use special cheese or dice up an avocado in place of the grated cheese.
