Mexican Quesadillas become little triangle gems that are perfect for a quick meal before activities, on the run or packed in foil for lunch. Look for Eden Organic refried beans in the health food section - some other beans can be runny and make the quesadillas messy. Serve with salsa, guacamole and sour cream and chopped vegetables if desired.
Fish Tacos can be served with a rice and bean mixture but this salad has a lot more flavour and added fruits and veggies to make a more balanced meal.
A smoky mix of spices on the fish is paired with a zippy white sauce and the crunch of a cabbage slaw.
The kids chop their vegetables, prepare their rolls and you just need to bake for 15-20 minutes before dinner.
You can fill these as much or as little as you like depending on your family. I find 6 works well for one recipe but small kids might only eat half of one. For a dairy free version use special cheese or dice up an avocado in place of the grated cheese.
