You need 3-4 hours to simmer this stew - it is well worth the wait. Serve over mashed potatoes, rice, couscous or quinoa.
Cinnamon Granola is a staple in our house that I make about every 2 weeks. We enjoy it with yogurt and fruit for breakfast or a snack. Follow the recipe below or try your own mix of dry ingredients - 7 cups total.
Beef Stroganoff is a recipe handed down to me from my mom and I still love her to make it for me if we are visiting for dinner. It is best served on egg noodles, brown rice with a side of green.
Though it is not traditionally an Indian side dish consider serving Chicken Tikka Masala with a side green vegetable making it a more nutritious option for your family.
As the weather gets colder keep this recipe on hand for those nights no one wants to go out. You can easily have the ingredients on hand for this recipe. Serve it along side a crusty loaf and you have the perfect, no need to go shopping, meal.
A 2 lb flank steak will serve 2 families or purchase 2 smaller steaks. Have your kids practice their measureing and make the marinade for this steak.
To prepare Chicken Fajitas the chicken is seared in a skillet on the stove top then transferred to the oven to finish cooking. Because of the cooking process you either need 1 oven per 2 chefs or you need to take shifts in the oven. When I cook with a group of 4 we usually prep toppings for serving as well to eliminate downtime. Decide before hand with guests who is buying the tortilla shells and optional toppings. Possible toppings include: grated cheese, salsa, guacamole, sour cream, lettuce and chopped fresh cilantro.
Chicken Pad Thai is best made just before dinner. The recipe also works well with shrimp just adjust to a lower heat and a shorter cooking time. I hope you enjoy this authentic fresh tasting version, it will not be the ketchup laden Pad Thai you may have tried in the past. For a gluten free version replace the soy sauce with tamari.
I never really liked cornbread; I found it either too grainy or too sweet, that is until I was introduced to this recipe by my sister-in-law. This version has been adapted from “Holly Hock Cooks” a book created by the cooks of this west coast retreat located on Cortes Island in BC’s Georgia Strait. Unlike some restaurant versions that would pass more as a dessert, this corn bread contains 5 cups of vegetables. Cornbread has many times travelled along side chili, soups and stews for the perfect mountain ski weekend. The recipe makes enough to share with another family or for leftovers which can be wrapped and frozen. I use jalapeño cheddar or havarti to give it a bit of heat and it saves a step but you could also use a seeded and minced jalapeño along with regular monterey jack cheese. Or leave out the heat for a kid pleasing version.
Spring rolls are perfect to make with a friend. Rolling can take about 40 minutes depending on how large you make your wraps so it is the perfect time to socialize. Though children love to eat this spring rolls the process can be difficult for most - rated 14+.
