Turkey Rolls and Smashed Potatoes

Turkey Roll and Smashed Potatoes are the perfect menu items for company. Like all the Sticky Kitchen recipes these can be prepared ahead of time so there is time for visiting when your company arrives.  This meal is great served with a green salad or other green vegetable.

Turkey Rolls present well and are actually easy to make. I originally tried a recipe from Fine Cooking and then I took out so many steps (brining, bacon wrapping and browning) that I had to call them "Rolls" instead of "Roulades." In the end the turkey rolls are so much easier and taste superior. This recipe makes two rolls so it is easy to make with a friend or make two and freeze one or bake them both with company. The mushroom and shallot sauce is optional but worth the effort.

  1. In a medium bowl combine the breadcrumbs, garlic, sage (3 T) and cheese.
  2. Place each breast between two large pieces of plastic wrap and using a meat mallet or rolling pin pound each to a 20 x 25 cm rectangle that is about 1 1/2 cm thick - about the size of a letter sheet of paper.
  3. Remove top piece of plastic and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  4. Lay out the prosciutto slices overlapping slightly on a cutting board to the approximate size of the turkey roll. The width of the slices should be the length of the turkey roll.
  5. Sprinkle breadcrumb mixture over the 2 cutlets. Begin with one roll start at the longer side and roll the turkey up as tightly as possible using the plastic wrap to hold it together if needed.
  6. Set the roll in the centre of the prosciutto perpendicular to the slices and pull the prosciutto up and around the roll. If the slices do not wrap all around the roll then lay one piece across the bottom of your roll.
  7. Repeat process with the second turkey roll. Cover rolls and refrigerate until ready to bake.
  8. Optional sauce can be started ahead of time or made when the turkey is resting. Heat a 10 inch frying pan over medium high heat and add butter (and any pan drippings). Cook your mushrooms and shallots until golden brown stirring occasionally. Add sage leaves and broth a bit at a time until you have the consistency of a sauce. Season with salt and pepper. Set aside until turkey is ready.
  9. Preheat oven to 425 degrees. Transfer the turkey roll to a baking pan and roast until the meat registers 165 degrees approximately 50 minutes. Transfer the roll to a cutting board and tent with foil for at least 10 minutes before slicing and serving.
  10. Add any pan drippings to your sauce. Slice the turkey across and serve with smashed potatoes and sauce.

Parmesan Chive Smashed Potatoes

Try this twist on a roasted potato with a recipe from Ina Garten "Parmesan Chive Smashed Potatoes." Boil them ahead of time, smash them on a tray and they are ready to bake in the oven just before dinner. Double this recipe if you are making for company.

Instructions
  1. Place potatoes and 1 tablespoon of salt in a large pot and add enough cold water to cover the potatoes. Bring to a boil over high heat and reduce to a simmer for 15-20 minutes until potatoes can be easily pierced with a fork.
  2. Drain the potatoes in a colander and spread on a baking sheet to cool.
  3. With the bottom of a metal measuring cup press into each potato until it is slightly less than 1 cm thick. Drizzle olive oil over and sprinkle with 1 teaspoon salt and 3/4 teaspoon pepper.
  4. 30 minutes before dinner roast the potatoes in the oven with the turkey roll at 425 degrees or convection at 400 degrees for approximately 25 mintues. Remove from the oven and sprinkle with parmesan cheese and roast until melted another 2-3 minutes. Sprinkle with chives and serve.

Meatballs and Meatball Quinoa Soup

Taking the time to roll these meatballs will give you 3 meals for each family and it can be a fun afternoon socializing with friends.

Enjoy Meatball Quinoa Soup tonight which is my take on an Italian Wedding Soup and then freeze the remaining larger meatballs for a pasta sauce or meatball subs.  If time is of short supply and you are cooking with a friend or 2 then just make one recipe of meatballs and 2 or 3 pots of soup.  For the soup you will need a burner for each guest.

If kids are doing this recipe I would suggest only 1 recipe split between 2 or 3 families so the kids don't get overwhelmed by the rolling involved. Feel free to adjust the mixture of ground meats - all beef, all turkey or a mixture of beef and pork are also delicous.

  1. In a 10 inch frying pan heat olive oil over medium heat. Add onions and saute until soft approximately 10 minutes.
  2. Stir in minced garlic and cook for another minute then set pan aside to cool.
  3. In a large bowl grate the carrot.  
  4. To the bowl add ground beef, ground turkey, bread crumbs, parmesan cheese, egg, salt, pepper and reserved onion mixture.
  5. With your hands mix all ingredients together until it is consistent - you might need to help kids with this step.
  6. Rolling between your 2 palms form meat mixture into small meatballs approximately 2 cm in size. Use approximately 1/3 of the mixture for these meatballs to be added to your soup.
  7. At this point you should begin your soup preparation. Once the soup is simmering you can make additional meatballs of a larger size to be used in meatball subs or pasta.  
  8. To cook meatballs you can bake them on a large baking sheet at 400 degrees for approximately 20 minutes stirring after 10 minutes.
  9. To cook meatballs in a marinara sauce, first bring the sauce to a boil, add meatballs and cover. Simmer this sauce for 45 minutes to one hour. Meatballs can be tested and should register 165 degrees in the centre.

Instructions
  1. Heat your dutch oven on medium heat, add oil and then onions, garlic, carrots and celery. Stir constantly and cook for approximately 7 minutes until vegetables have started to soften but not brown.
  2. Add bay leaf, broth and strained tomatoes and bring to a boil.
  3. Add your small meatballs and continue to simmer for 20 minutes until cooked through.
  4. While soup is simmering prepare your greens by removing tough stems and spines, and finely chopping leaves - the smaller the better for my kids.
  5. Add beans, greens and quinoa and simmer 15 minutes until greens and quinoa is tender.
  6. Taste and add salt and pepper as needed.
  7. This soup is more flavourful made ahead of time. Refrigerate and reheat before dinner.
  8. Garnish with freshly grated parmesan cheese and serve.

Turkey Burgers & Apple Celery Salad

This is the perfect kid menu for the mini-chef or just to enjoy at dinner.  It works best to do one recipe at a time. Start with the salad and it can sit on the counter while you make the burgers.

I love this salad especially for kids who might shy away from a traditional greens. This is also perfect packed in a lunch because it can be dressed ahead of time. Throw a bit of arugula in before serving for a more grown up version.

Instructions
  1. Cut apples in thin slices shaped like half moons.
  2. Cut celery in thin angled slices.
  3. Toast almonds in a frying pan on medium heat until golden brown and fragrant. Watch closely as they will burn easily.
  4. Using a peeler cut 16 or so curls of parmesan cheese.
  5. Mix together dressing in a small bowl with a fork.
  6. Toss apples and celery in the dressing and top with cheese and almonds.
  7. Store in the refrigerator for up to 4 hours.

Each recipe will make 4 burgers our family has now graduated to 1 1/4 lb of meat for 5 burgers so I find it easiest to get this at the butcher, often we also get ground turkey breast for a leaner option. If you are cooking with friends you can share packages. The host can supply buns too which are often cheaper in larger quantities. Guests will need to bring a container or plate for transporting home uncooked burgers

  2. With clean hands mix together all ingredients and divide into 4 or 5 portions depending on the number in your family.
  3. Form each portion into a patty about 1.5 cm thick onto parchment paper.
  4. Store in the refrigerator or freezer covered until ready to cook.
  5. Preheat barbeque grill to high.
  6. Reduce temperature to medium low and grill burgers 6-8 minutes per side until cooked through and internal temperature reads 165 degrees.
